This week I took a leaf out of my friend Elizabeth's book. Most of our dinner plans are leftovers. For the past few weeks I've been noticing Elizabeth's menu plans include more and more leftovers. At first I thought this was a little boring (sorry Elizabeth!) but I think I will try it out this week!
Here's our menu plan for the week:
Breakfasts will be either cereal or oatmeal. Lunches will be mostly leftovers, sandwiches or Smart Ones (don't judge, they were on sale last week!)
Snacks will be yogurt, hard boiled eggs, jello, celery and peanut butter or hummus and fruit.
Tuesday:
Hamburgers, fruit and/or vegetables
Wednesday: Sandwiches (I'm going to be too late to eat at youth group, so I will eat a sandwich between the gym and a doctor's appointment!)
Thursday:
Chicken and rice, veggies and fruit.
Friday:
Sandwiches
Saturday: Grilled pork chops and either grilled or roasted veggies.
Sunday: Breakfast for dinner.
Boring? Perhaps...but I think it will help our leftovers and food waste this week. I will let you know how this goes! Man, cooking and eating for two is hard!

I'm a 27 year old, newly married, newly living in Washington, librarian trying to find a job in a library. Meanwhile I'm working as a office assistant while I figure out how to live my new life as a wife.
Geoff, my wonderful, caring husband works with computers and, in his free time, plays with video games, lounges on the couch and cooks with sourdough.
Clarabelle and Hermione are our babies! Hermione, who came to Megg as a kitten, loves playing with fur mice and bottle caps. Clarabelle's hobbies include sleeping, lying in the sun and playing with straws.
Geoff and Megg met through a mutual friend and spent 4 years dating long distance. They were finally able to live in the same zipcode after what seemed like forever when they got married on January 2, 2010! Soon after they bought a house and have been enjoying the Pacific Northwest together while being both newlyweds and new homeowners!
